Banana Bread
Everyone needs a banana bread recipe… so here’s an easy, one bowl recipe.
3-4 ripe bananas
1/3 cup melted, unsalted butter
1 large egg
1 tsp vanilla extract
1/4 tsp ground cinnamon
1/8 tsp salt
1 tsp baking soda
1 tsp baking powder
1/2 cup caster sugar
1 1/2 cups plain flour
optional: walnuts/pecans/macadamia nuts
Ingredients:
Pre-heat the oven to 180 degrees Celsius.
Mix the mashed bananas, butter, egg, vanilla, cinnamon and salt together in a large bowl.
Add the baking powder, baking soda and sugar. Mix.
Fold in the flour.
If adding nuts, fold it in now.
Pour batter into tin and bake for 30-60 minutes (or until tester comes out clean) - if making mini loaves, the bake time will be less.

For added crunch, add walnuts/pecans/macadamias in the batter.
This recipe can be made as mini loaves (bake time will be less) or as a normal-sized loaf.
Serve with butter.
Banana bread can be frozen.
