My Favourite Granola

A great breakfast or crunchy snack to have on hand. This granola tastes like peanut butter and syrup on toast (a favourite combination of mine)! Tastes amazing on its own, with yoghurt or milk.

  • 1 cup rolled oats

  • 3/4 cup cornflakes

  • 2 tsp sesame seeds

  • 1/2 cup shopped dates

  • dried apricots (add as much as you’ll like)

  • 1 Tblsp peanut butter

  • 3-4 Tblsp golden syrup OR honey (can do half/half)

  • 1/2 cup shredded or desiccated coconut

  • 1/8 tsp salt

  • 3 tsp coconut oil

  • 1/2 cup chopped cashews (or nut or your choice)

Ingredients:

  1. Pre-heat the oven to 180 degrees Celsius.

  2. Mix all the dry ingredients together in a large bowl.

  3. In a separate bowl, melt the peanut butter, coconut oil and syrup/honey. Mix together.

  4. Combine the wet ingredients with the dry ingredients.

  5. Place on a lined baking tray and bake for 5-10 minutes, or until golden.

  6. Allow to cool before breaking granola apart.

  7. Store in a sealed container.

  8. Enjoy!
